From Ghana, this spice is related to ginger and cardamom, is widely used in Northern and Western African cuisines, and is an excellent accent for okra, tomato and vegetable dishes. Grains of Paradise became a fashionable substitute for black pepper in 14th and 15th century Europe, especially France. Extremely versatile, it can be used with sweets, coffees, teas, vegetables and meats.
